It's that time of year, Dudes n' Grrrls. The leaves are turning color, the air is getting crisper and the tendency to eat more is becoming stronger. That's right, winter is right around the corner and we're gonna be cooking up soups, stews, chili's and pies!
Whoa, hold on...pies?
Yes....Turkey Skillet Pie with Drop Biscuits!
Let's get to it!
First, get all your ingredients prepped. Wash, dry and slice your veggies.
Whisk together your dry ingredients for the Biscuits.
Grate your cheese.
Measure out your Buttermilk.
Start your skillet on Medium heat.
Saute your onions, peppers and mushrooms in your oil till just softened.
Add your garlic, stir well. They don't need to be cooked through since it's going into the oven.
Move your vegetables to the sides, making a well in the middle.
This is because you're making room for your next ingredient.
Now add your Ground Turkey. Stir and cook till it's no longer pink.
(Again, it will finish cooking in the oven)
Now you can add your Spices and Cilantro. Stir until everything is coated.
Pour in the Diced Tomatoes and this is done. Oh, to add a little more heat, you can sprinkle a slight layer of Crushed Red Peppers over this right before you put your Drop Biscuits in.
This part is done! Turn off the stove.
You'll want to Preheat your oven now to 425 degrees.
Now take your Butter and you can cut it up into small cubes, or grate it over your flour mixture. With your fingers, massage the butter into your flour until it's all crumbly. Add your cheese and mix well.
Pour your Buttermilk over it and mix until just blended. (For light,fluffy texture, you don't want to over work your batter)
Press together 12 small Biscuits and lay on top of your Turkey mixture and bake at 425 for 20 minutes.
You'll smell those Biscuits before the time is up. It's hard to wait, but well worth it!
