The first thing you will want to do is cook your turkey bacon. We find it easier to bake large amounts on a cookie sheet in the oven. (350 degrees for about 15 minutes) It's quick and less messy.
Next, spray a thin layer of olive oil (or spread a small amount) onto your 9 inch pie plate.
Once you have peeled and thinly sliced your sweet potato you will want to layer them into your pie plate.
Overlap them the best you can. We cut some in half to do the sides.
Once you have them all in. Give them a slight spray of your olive oil. (or brush them slightly)
By now your turkey bacon should be done in the oven. Remove them and set aside to cool down. Now place your pie plate into the oven (which is still at 350 degrees) and bake for about 20 minutes.
After 20 minutes, the sweet potatoes should be slightly tender. Pull the pie plate out and set aside. You will want to increase the heat to 375 degrees now.
Now you can saute your diced onions in about 2 teaspoons of olive oil. In a couple of minutes they will start to look translucent. At this time, add your spinach. Stirring frequently and turning until all the spinach is wilted. Remove your pan from the heat.
In a mixing bowl, you will whisk together the whole eggs, egg whites, milk and seasoning.
Now it's time to put it all together.
Spread your onion & spinach over the sweet
potato crust. Sprinkle the bacon bits over the spinach and carefully pour the egg mixture over that. Last, you will sprinkle the crumbled feta cheese on top.
Time to pop that back into your preheated (375 degrees) oven and bake it for 35 minutes.
Once it is done, we let it set for about 5 minutes before cutting into it. We cut this into 4 even servings.
