Roasted Whole Cauliflower

This recipe is so simple, it's almost embarrassing. A whole roasted cauliflower with a simple dressing drizzled on top.  Got a few minutes? Lets make it!

  • 1 Large head of Cauliflower
  • Oil spray
  • Sprinkle of S & P
  • 2 T. Olive Oil (we've also used Avocado oil)
  • 2 T. Lemon juice
  • A handful of chopped Cilantro
  • 1 t. Mustard (we used grainy)
  • 1/2 t. Crushed Red Peppers (optional...sorry, we forgot it in the picture)

Preheat your oven to 425 degrees.

Now, carefully cut away the leaves and core from your cauliflower.

 

Keep the whole head of cauliflower intact. Wash it and pat it dry.

 

 

We used an olive oil spray. If you don't have it, you can drizzle about 1 tablespoon over the cauliflower.  Rub it into all the crevices as much as you can.  Sprinkle it now with your salt & pepper.  

Set it in a pan or on a cookie sheet and place it on the middle shelf of your preheated oven.  

Set your timer for 45 minutes and walk away.  (at 45 minutes, check it by inserting a knife.  If it's still hard, bake for up to 15 more minutes)

Once it's done and golden brown.Pull it out of the oven and let it cool for a few minutes while you whisk up the Olive oil, lemon juice, cilantro and mustard.  Drizzle this over the cauliflower head. We sprinkle come extra cilantro around it as well as some crushed red pepper flakes.
