This is a GREAT option when you are trying to cut out as many calories and carbs as you can out of your diet. We have been trying various recipes to replace bread (see our Cauliflower Bread Basic Recipe, which we love) and this is a REDICULIOUSLY easy one.
How easy? Well, glad you asked, let's find out!
First, start your oven pre-heating to 450 degrees fahrenheit.
Now, take two bowls. Separate your egg whites into one bowl and place the yolks into the other.
Next, add the Yogurt to your yolks and whip them up until they are smooth and creamy.
Now add the Baking Powder to your egg whites and blend them for 2 to 3 minutes until they are fluffy and stiff.
Pour the yolk mixture into your egg white bowl and add a pinch of salt.
Now, with a gentle hand, fold all of this together. Scrape the sides of the bowl and fold it over the center, scrape and fold, scrape and fold. ( you want to keep as much "air" in the eggs whites as possible ).
Once it is blended together, take your baking sheet and place some parchment paper over it.
We used a 1/4 c. measuring cup and scooped 6 portions out onto our baking sheet.
Once you have all six on your baking sheet, place into your pre-heated oven and bake for 12-15 minutes.
They are fluffy and golden brown when done.
Carefully remove them from the oven and let them cool down before handling (they will settle down flatter as they cool)
Time to make your favorite sandwich!
Today we did a BLT. Or, you could make these and make more of a snack or desert with Cream Cheese, fruit and drizzle some honey or agave. The options are endless!
