If you're watching your calories, wanting a low carbohydrate alternative to traditional pasta, Vegan or are Gluten intolerant then this little Gem is perfect for you!
Our Roasted Spaghetti Squash recipe is delicious as a side dish. You can use it to replace pasta for dinner or even eat it with your morning eggs!
Enough said, let's get to it!
First, cut off both ends.
Then, stand it up and carefully cut down the middle (Try rocking your knife back and forth. The skin is pretty tough)
Next, take a spoon and scrape out the seeds and strings holding them.(You can save to roast them later )
You'll want to line your pan with the Parchment paper.
Drizzle about 1/2 t. Olive oil on each side. Spread it around with your clean fingers.
Next, sprinkle a bit of Salt, Pepper and if you'd like, Garlic powder.
Now, turn them over so cut side is flat on your baking get pan.
Bake them at 375 for 35 - 40 minutes.
Pull them out of the oven, carefully, with a hot pad or towel, turn them over to let them cool down for several minutes.
When they are no longer to hot to handle, take a fork and start to scrape or pull away from the outer skin. The Squash will resemble thin spaghetti like strings.
We like to drizzle just a bit more olive oil and season it again to taste.
