Creamy Lemon Protein Squares

If you love lemon cake you're probably looking at the screen right now and thinking "why can't I just reach into my monitor and eat it?!" Well, you're in luck! It might not be *quite* as easy as reaching into your screen and grabbing it but our Creamy Lemon Protein Squares recipe is super simple and you'll have this awesome protein snack finished in no time. And most importantly: ready to eat! 

What are we waiting for? Let's get to it!

 

CRUST

  • 1/3c. /30g. Rolled Oats
  • 1/3c. /30g. Oat Flour
  • 1T. Granulated Sweetser (we used Stevie in the Raw)
  • 1T. Vanilla Protein Powder
  • 1/3c. /40g. Butter
  • Zest from one Lemon

FILLING

  • 1 1/2c./400g. 100% Fat Free Greek Yogurt
  • 3 scoops/84g. Vanilla Protein Powder 
  • 2 packets/15g. Gelatin
  • 1/2c. Warm Water ( remove 2 T. and replace with 2 T. of juice from the lemon you zested )

 

 

 

 

 

 

This recipe really is easy. 

Make it several hours or even the day before you want to serve it up. Believe us, once it's served, it won't last long!

Start with the crust.
Whisk all the dry ingredients together first.
Then Zest that whole Lemon right over it and mix it in.
Slowly drizzle your melted butter over it and stir it up till it's all combined together.
Lay some parchment paper in your pan. ( this makes it easy to lift it out and cut into squares )
Now press your crust evenly over the bottom of the pan.
You can set this aside.

 

 

 

 

In a bowl, whisk your Yogurt and Protein till combined.
In another bowl disolve  your Gelatin in the warm water & Lemon juice. Whisk this also until smooth.
Now pour the Gelatin liquid into your Yogurt mixture and Whisk away!

Pour this onto your Crust and spread evenly.

Cover this with plastic wrap and set in the refrigerator for several at least a couple hours or even overnight.

Once you feel it's "set" enough to eat, just slowly pull it up and out of the pan.
This makes it so easy to slice and serve.
