One 16oz. Bag frozen chopped spinachThaw and drain as much water out of spinach. Put in large bowl. In smaller bowl, mix eggs,onion, seasoning and bread crumbs. Pour over spinach and mix well. Fold in cheese last. Drop heaping Tablespoon onto heated pan. Press down and shape. Cook approximately 4-5 minutes each side. Want egg to cook thoroughly. Garnish with salsa! Yummy!!

dash of chopped onion, garlic & red pepper
