So, when you think of your "Cheat Day" you think of pizza, don't you? Well, what if we told you, you could have pizza and it would fit in with your Macro's that you are trying to stay inline with?
Or, trying to go "Low Carb"? What if we told you you could have this pizza and it won't put you over your limit?
Gluten Free? Yes, we can tell you that this pizza would work for you as well.
We're making the crust out of CHICKEN! Yes, chicken. You may thinks it's strange. Maybe a bit gross? Hey, you eat chicken on the top of your pizza, why not the bottom?
Let's make this and see for yourself how fast and easy and most important, tasty it is.
Crust (Todays recipe is for the CRUST. The picture below shows only those ingredients)
First, you will want to pre-heat your oven to 450F/232C.
Then, you will want to cut up your three Chicken Breasts into smaller pieces. (It blends easier and faster that way)
Place the chicken pieces into your high powered blender or food processor.
Next, add all of the other ingredients for the crust over the chicken.
Place the lid on securely and blend away! It will literally take less than five minutes.
Now you will want to cover your baking dish or pizza pan with parchment paper. (We cut ours to match the round stone we used). Drizzle a little olive oil or oil of your choice and spread it around with your hands. This way, when you form your pizza crust, it won't stick to the pan or your hands.
We used our right hand to start pressing and forming the chicken into a round pizza shape up against our left hand. We like to make it no more than a 1/2 inch thick and the edge about an inch.
Bake this crust in your oven for 15-18 minutes. It should turn a golden brown.
When you take the crust out, turn your oven down to 400F/200C
Now, time to add your ingredients! We spread out our Pesto sauce and sprinkled half of our cheeses (that we mixed together) over it.
We added the rest of our toppings and ended with the other half of the cheese. Bake this in your 400F/200C oven for 8-10 minutes. You want the veggies cooked and the cheese melted.
That's it! The fun part is you can add any spices or herbs you want to the crust to match the type of toppings you choose to use. Take this recipe and run with it!
