Sometimes the urge to snack can be brutal. Especially if you've got a busy schedule! It's times like these where the thought of cooking up a time consuming meal is the last thing you want to deal with.

Enter Brussel Sprouts.

Brussels Sprouts are an EXCELLENT source of vitamin C, K, Potassium and Dietary Fiber. But wait, here's the important part: they also taste GREAT and make a great snack which you can whip up in no time.

It's time to find out for yourself with this simple Vegan recipe.

Are you ready? Let's do it!

  • 1 1/2 lbs (approximately 4c. or 400g) Brussels Sprouts
  • 2T. Avocado (or Olive) Oil
  • 1/2 t. Salt, Pepper & Garlic Pdr.

Begin by preheating your oven to 400.

Rinse your Sprouts and then cut off the ends and peel off any yellow or old layers.
Cut each one in half.
We tossed them into a gallon zip lock baggie and added the Avocado oil.
Zip it up and massage that oil all over each piece.
Open it up and add your Salt, Pepper & Garlic pdr.
Zip it up again and massage that till every piece is covered.

Now, put them on your baking sheet and spread them out in a single layer, (If you have too many, use two sheets).
Pop those little suckers into your preheated oven for 20 -25 minutes until fork tender.

That's it!
